Packaging Fresh Berries: The Respiration-Moisture Balance
Berries are among the fastest-respiring fruits, and their packaging must balance two opposite needs: enough airflow to vent respiration heat and moisture, but enough barrier to slow water loss. The balance sets shelf life.
The Scenario: A clamshell that sweated
A berry grower's raspberries arrived at retail with condensation inside the clamshell and mold at the bottom of the punnet. Shelf life ran two days short of the retailer's requirement.
Pain Points
- Sealed clamshells trapped respiration moisture;
- Condensation dripped onto bottom berries, seeding mold;
- No airflow design existed for the punnet.
The Solution: Engineering the respiration balance
The grower re-engineered the pack with produce-packaging principles:
1. Vent placement Vents positioned to create air channels over the berries, not just holes in the lid.
2. Moisture management A moisture-absorbing pad or dry liner catches condensation before it reaches the fruit.
3. Modified atmosphere Controlled oxygen levels slow respiration — the same principle behind MAP for berries.
The Result: Two extra days of shelf life
The vented pack with a dry liner cut condensation and added two days of retail shelf life. Mold complaints from retailers stopped, and the grower's pack now meets the buyer's spec.
